Protecting biodiversity

As UNESCO Goodwill Ambassador, Mauro Colagreco works to safeguard life in all its forms.

Faced with the collapse of biodiversity, cultivated, underground and marine, he offers — through Mirazur and its regenerative gardens — a model of sustainable gastronomy that celebrates food diversity, counters the standardisation of taste, and honours local cultural traditions, ancestral know-how and respectful production chains.

“Eating without eating the planet.”

Eliminating plastic

In 2020, Mirazur became the first restaurant in the world to receive Plastic Free certification. This ambitious elimination of all single-use plastics required nearly three years of dedicated work by Mauro Colagreco and his teams.

Alternatives, supplier awareness, sorting, composting, recipe adjustments… no detail was overlooked.

This pioneering initiative demonstrates that radical change is possible and opens a concrete path toward plastic-free dining.

“More than 300 million tonnes of plastic are produced globally each year, 12.7 million of which end up in the oceans. That’s the equivalent of one garbage truck per minute.”

Envisioning a more respectful model

In 2024, Mirazur became the first three-Michelin-star restaurant in the world to enter the B Corp™ community, an international recognition awarded to companies combining social and environmental performance with transparency.

Through his pioneering commitments, Mauro Colagreco expresses a deep desire to transform the current hospitality model - at every gastronomic level - towards a new paradigm: more respectful, fair, vibrant and sustainable for the planet and future generations.
