A critical challenge for our oceans and our health

Every year, up to 12.7 million tons of plastic are dumped into the oceans, contributing to the formation of the so-called “plastic continent” in the Pacific. Over time, this waste breaks down into microplastics, which enter the marine food chain and are ingested by numerous species. On average, each human being ingests around 5 grams of plastic per week, roughly the weight of a credit card. During a trip to Mexico, Mauro Colagreco discovered a beach overwhelmed by plastic waste. This experience became a turning point, prompting him to significantly reduce plastic use across his establishments. In 2020, after three years of work analyzing, eliminating, and replacing plastics, while also involving suppliers, Mirazur became the first restaurant in the world to be certified “plastic-free,” marking a strong commitment to a more sustainable model. Key actions implemented include:
  • Eliminating 10,000 km of plastic wrap per year
  • Reducing nitrile glove use by 90%
  • Cutting disinfectant products by 90% thanks to water ozonation
  • Completely removing vacuum bags and disposable piping bags, now replaced with reusable alternatives
  • Reducing trash bags by 75%, with the remaining bags made from plant-based materials

The fight against plastic pollution is a major challenge for the preservation of marine ecosystems and human health. Initiatives like those at Mirazur demonstrate that concrete solutions exist and that it is possible, both locally and globally, to drastically reduce our plastic footprint. Each year, the teams of Chef Mauro Colagreco also take part in plastic waste collection initiatives, notably in Menton during World Oceans Day, in partnership with the association Stand Up for the Planet. Projects such as “5 grams by Mauro Colagreco” are also carried internationally through Mirazur Beyond Borders events.
