Mauro Colagreco cultivates far more than a garden. On 100% natural farmland, following the principles of permaculture and biodynamics, the Mirazur’s exceptional 5-hectare vegetable and orchard gardens are at the very heart of the restaurant. They form a living connection between nature, cuisine, and ecological awareness. Permaculture is a holistic and sustainable approach to agriculture, developed in the 1970s, aimed at creating, among other things, symbiotic agricultural systems inspired by natural patterns. It takes natural harmony as a model to enhance resilience and agricultural productivity, notably through soil preservation and biodiversity conservation. With a dedicated team of about ten gardeners, over 1,500 varieties are cultivated according to permaculture principles: manual soil work, regular mulching, planting mutually beneficial crops together, and systematic crop rotation. The gardens supply up to 80% of the ingredients used in Mirazur’s kitchen. Today, Mirazur has reversed the traditional menu planning model and introduced the concept of letting nature dictate the menu. Each day, the menu is guided by the seasons, based on the ripeness and availability of products harvested from the gardens and local producers.
